Is this what 'nesting' looks like?

Taking a little break from my usual fashion post to share with you one of my favorite things to bake - chocolate chip / M&M cookies - yum! This is a borrowed recipe from *Nestle, but it has become such a family favorite, so I thought I would share.

I follow the recipe pretty thoroughly with one exception, I replace regular sugar with Splenda sugar. I did this once to test it out for my Grandma, and it became such a hit that I have stuck to it. It makes the cookies slightly less sweet and a little bit more fluffy, which I love. I have always enjoyed baking and I am not much of a cook, so when I get the itch to be in the kitchen, I take full advantage!

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup granulated sugar (I replace with 3/4 cup Splenda sugar)
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels (or for a twist, add M&M's instead)
  • 1 cup chopped nuts (optional, I leave them out)


Directions:

*Preheat oven to 375F

COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets. 

BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
